It will get better with aging, probably another 5-7 years would be good, but don't bother unless you have a good place to keep it. A nice dark, dank, cool basement is ideal. Whatever you do don't keep it in the kitchen or anywhere else where it gets warm. Serve it at room temp. Enjoy!
