I would advise against any SLR-AF body less than the N90 because of the excessive use of cheap plastic parts.IMHO, the great thing about Nikon is the quality of the glass.
My recommendation would be to get a less expensive body, used and the best lens you can.
The FM, in its various iterations, is a marvellous body. All manual. I believe that it is perfect for learning photography.
If you must get AF, look for a used N801 (8008) or N90.
There are lots of lenses out there. Some of my favourites:
105/2.8 micro (my all time favourite)
35/1.4
85/1.4
