When I want my wines to turn out complex and profound, I play Bach's Art of the Fugue during fermentation. For dramatic, big, mouthfilling wines (e.g., late harvest Zin), I play the 1812 Overture. For wines that are meant to age for many years and maintain their appeal, I play Beethoven's 9th. Works every time! :)
