Guillard Cuvee Prestige Rose if you want to find out about Roses without breaking the bank. I get it for $40.(vineyards next to Moet's Dom Perignon) Nicholas Fueullente( I am sure I spelled it wrong) if you want big fruit. Going to have smoked salmon go for the very lean Domaine Carneros by Taittinger. Decide you want to stay with cavaas, Paul Cheneau. NV Brut that is full bodied, Pol Roger or Veauve Cliquot. A fun thing would be to get some cavaa sparklers and their California makes and compare. Krug is the best but not if you don't know the ones just less than it. If you end up having to go with a large house like Moet, Mumms, Perrier Joet, etc if you can get the Vintage dated brut as it is will express the house style the best for less than half of the Tete Cuvee or Head of the Blend. which is for Moet Dom Perignon, Veauve Cliquot La Grande Dame, Pol Roger Winston Churchill and so on.
