I cannot give you a recommendation for a town or hotel, etc. But we were in Chile in February and spent several days in Santiago prior to boarding our cruise ship. May I recommend finding the Santa Rita winery in the Maipo Valley. Their better wines are superb. Also, look up a light white wine known as "30 Sur" (a latitude, I'm sure). Lightly chilled it's very clean tasting and refreshing. The waiter in the cocktail lounge in our hotel suggested it and we liked it so well we went to a Super Mercado and bought several bottles to take with us on the ship.
