1995 Volvo Penta 5.7 stalling issue

I recently purchased a 1995 21' Chapparal 2135, which has a Volvo Penta 5.7 engine (dual prop). When the boat runs, it is fabulous. However, after an hour or so, it will stall at higher speeds. I have replaced the fuel filter as well as cleaned (several times) the small mesh fuel filter inside the carburator. The boat sat unused for 2 years. Previous owner swears he didn't leave gas sit in it. Upon purchasing the boat, I promptly put $130.00 in gas in it. It seems that there may be debris in the gas tank, and that it is restricting gas flow to the carb. I've added a gasoline additive to try to expedite the cleaning process. I keep it moored at a local lake, so it sits idle during the week (maybe the "debris" settles and after bouncing around on the waves, gets worked up again).

Anyway, I'm looking for any other possible causes/solutions/opinions, before, like everyone, I hand my checkbook to the Marina.
