No doubt, your original should be the highest quality possible. The trip is a once in a lifetime experience and your results should match them. For situations like this you should ALWAYS choose raw format in order to get the best possible res and output.... remember, this is your ORIGINAL and from there it only gets worse. JPEG is compressed (although the large ones not as much... but, still compressed).
Your TWAIN driver should read the raw format and output to what ever program you use (pref. Photoshop)... then you save the image for permanent storage on a CD or DVD in PSD and the original RAW format.
Lot's of other options out there available to convert raw formats.
