I bought a Canon PowerShot S40 digital camera about ten days ago and am thrilled with it. It sells commonly for about $550. You do have to figure in a higher-capacity memory card, but I think that's almost always the case. If that's too much (with a 256 card and an extra battery, you may be slightly over your price point), I believe the S30 is substantially identical except it's 3MP vs. 4.

This is my first digital camera and probably more than I need, but the results are thrilling. The instant gratification factor is tremendous, and the freedom from buying film and getting it developed and then realizing that most of the pictures are clunkers is tremendously liberating. Everyone who has seen the resulting photos is amazed by their quality; I would guess that several friends are likely going to purchase one sooner rather than later.

One feature that I hadn't focused on (pun intended) is the ability to zoom in on photos after you've taken them on the camera LCD. This allows you to take a closer look at the photo right away to decide whether you want to delete it. I haven't gone back to check whether this feature is common, but I'd look for it when you're evaluating different brands. I use it constantly.
