Why not start with something solid like a fully manual Nikon FM-2 with a decent lens or two? This will FORCE you to learn about aperture, shutter speed, focus, and depth of field. Once you've mastered some of the technical issues you might then decide on a more automated SLR. FM-2 is relatively inexpensive (used) and very solid.

I would stick with brands like Nikon or Canon mainly for the vast number of aftermarket accessories like lenses. I once owned Pentax but sold it because the aftermarket selection was very slim pick'ins compared to Nikon/Canon. Just my humble opinion.
