Tripods are a pest, but you can get monopods (one telescopic leg) which are designed to aid steadyness when you are hand holding the camera.

Try getting yourself more settled and take a few deep breaths as you are getting ready and framing the shot. When you are ready, take a final breath and exhale slowly, pressing the shutter release slowly as you do so.
